Simnel Cake

Classic bake! Simnel Cake is a light fruitcake topped with marzipan. For an extra treat James has added chocolate truffles to the top too! He used chocolates from Chocolarder.

Ingreadient :
    • 175g butter
    • 175g dark brown sugar
    • 3 eggs
    • 50ml milk
    • 175g self raising flour
    • 2 tsp mixed spice
    • 1 tsp ground ginger
    • 100g glace cherries, chopped
    • 400g mixed fruit or sultanas
    • 50ml brandy

    For marzipan

    • 175g caster sugar
    • 300g icing sugar
    • 450g ground almonds
    • 2 eggs
    • Squeeze of lemon
    • To decorate – chocolate truffles
Direction :
    1. Preheat the oven to 160C
    2. Grease and line a 28cm cake tin
    3. Beat the butter until light and fluffy with the sugar. Then, add the eggs, brandy and milk, mix together
    4. Then, separately, mix the flour, spices and fruit until it is well mixed. Then, fold this into the wet mix.
    5. Bake for 1 ¼ to 1 ½ hours until it is golden brown and firm in the middle. Allow to cool.
    6. Place all of the ingredients together in a mixer / Kitchen Aid with a K attachment, and mix together. Do not over mix as the marzipan will become greasy.
    7. Roll out on icing sugar and use the chocolate truffles to decorate the cake. Blow torch the top to colour, if you wish.
