Meatballs with Spanish Sauce

This Meatballs with Spanish Sauce dish is made with wild boar. A rich and satisfying dish, the wild boar is amazing! James serves his dish with wild boar chops on the side!

Ingreadient :
    • 500g boar mince
    • Salt and pepper

    Sauce

    • 15ml olive oil
    • 1 tin chopped San Marzano tomatoes
    • 1 onion, peeled and diced
    • 2 cloves garlic, chopped
    • Few sprigs oregano
    • 50ml white wine
    • 50ml sherry
    • 1 star anise
    • 1 tbs pimento
    • 1 jar roasted red peppers chopped
    • 1 small bunch of parsley

    Optional

    • 4 boar chops placed onto a tray seasoned and grilled for 8 minutes on high.
Direction :
    1. Season the meat and roll into 12 even sized balls. Fry in a non-stick pan for 8 to 10 minutes.
    2. Meanwhile, fry the onion and garlic in oil for a minute. Add the oregano, wine tomatoes, peppers, pimento, sherry and star anise and bring to the boil.
    3. Simmer for 5 minutes then finish with the parsley, remove the star anise and season. Pop the meatballs in the sauce and serve.
