Lamb with Broccolini and Salsa Verde

This dish of Lamb with Broccolini and Salsa Verde can be cooked in a pizza oven or on a traditional grill. The dressing is made with sherry vinegar, Dijon mustard, shallot, coriander, mint, dill, parsley, capers, lemon juice and olive oil. Surprisingly easy and tasty too!

Ingreadient :
    • 12 lamb chops
    • Salt and pepper
    • 400g broccolini
    • Few sprigs of thyme, chopped
    • 1 lemon juice and zest
    • 50 ml olive oil

    Dressing

    • 2 tbs sherry vinegar
    • 1 tbs Dijon mustard
    • 1 shallot, peeled and diced
    • 1 small bunch coriander, chopped
    • 1 small bunch mint, chopped
    • 1 small bunch dill, chopped
    • 1 small bunch parsley, chopped
    • 2 tbs capers
    • 1 lemon juice and zest
    • 50ml olive oil

    To serve

    • 200ml thick Greek yoghurt
    • Few sprigs of mint and coriander
Direction :
    1. Heat a pizza oven until hot or a grill to high.
    2. Place the chops onto the tray, season and drizzle in olive oil. If grilling, pop straight into the pizza oven and cook for 2 to 3 minutes. Flip over and cook for a further 2 to 3 minutes then rest for a few minutes. At the same time, drizzle the oil onto the broccolini, season, sprinkle in thyme and grill or BBQ for the same time as the chops. Zest over the lemon and then squeeze over the juice.
    3. Mix all the ingredients together for the salsa.
    4. To serve, pop the chops and broccolini onto a platter, top with the dressing and drizzle in extra oil.
