Chicken with Parma Ham, Mozzarella and Deep-fried Courgettes
Chicken with Parma Ham, Mozzarella and Deep-fried Courgettes. This is an easy to prepare dish that doesn't disappoint on flavour! A recipe you'll return to time and time again!
Ingreadient :
2 chicken breasts
4 slices of Parma ham
4 slices mozzarella
Salt and pepper
2 eggs, beaten
75g plain flour, seasoned
100g panko breadcrumbs
200g butter
Deep fried courgette strips
Rocket
Direction :
Place the chicken between 2 layers of cling film and bash out to 2 mm thick then fill with the cheese and ham.
Heat the butter in a large pan until foaming.
Coat the chicken in flour and egg twice and then the breadcrumbs. Fry for 10 to 12 minutes until cooked through and golden brown. Drain onto kitchen paper and season with salt.
Deep fry the courgettes at 160c until crisp. Drain, season and serve with the chicken and rocket.
