Sweet, delicious and totally moreish, this Banana & Honey Cake is perfect for elevenses, afternoon tea or a post meal treat.
Ingreadient :
200g butter
200g caster sugar
200g self-raising flour
3 eggs
3 bananas
100g walnuts, chopped
2 tbs honey
200g mascarpone
2 tsp honey
¼ lemon juice
3 bananas sliced lengthways
2 tbs icing sugar
Extra honey to drizzle
Direction :
Preheat the oven to 180c.
To make the cake, beat the butter and sugar until white. Add the walnuts and bananas, beat until smooth, then add the eggs and beat until mixed. Then fold the flour in by hand.
Spoon into a 20cm lined round cake tin, bake for 50 minutes, then allow to cool.
Dust the bananas with icing sugar and blow torch until candied.
To make the icing, whisk together mascarpone and honey with a squeeze of lemon juice. Spoon over the cake, dot with bananas and drizzle on more honey .
