Baked Cheesecake with Cherries

Baked Cheesecake with Cherries! This cake has no base and is more dense than an uncooked cheesecake. Inspired by James's recent travels to Spain, the flavour of the cake marries perfectly with the sweet and slightly tart cherries. It's a practically perfect dessert!

Ingreadient :
    • 800g cream cheese
    • 225g caster sugar
    • 3 tbsp plain flour
    • 200g sour cream
    • 4 medium eggs
    • 2 tsp vanilla extract
    • 300g cherries, stoned
    • 50 ml water
    • 50g caster sugar
    • 1 tsp vanilla extract
Direction :
    1. Heat the oven to 240c.
    2. Butter a 23cm, deep, loose bottom tin and line with paper.
    3. Whisk together the cream cheese and sugar for 2 minutes, add the flour eggs and vanilla whisk until smooth and pour into the tin.
    4. Bake for 20 minutes then drop the oven temperature down to 180c and cook for another 20 minutes, cool.
    5. Pop the sugar and water in a pan, bring to the boil and then add the cherries and vanilla and cook for 5 minutes.
    6. Slice and serve at room temperature with a spoonful of cherries.
