With colder days fast approaching an autumnal desert is just the ticket! What could be better than Apple and Pear Crumble with home made custard? It's a perma favourite for a reason!
Ingreadient :
Fruit
4 pears, peeled and diced
4 cox apples, diced
50g demerara sugar
Crumble
400g plain flour
200g butter, diced
200g demerara sugar
Custard
8 egg yolks
75g caster sugar
400ml milk
400ml double cream
1 vanilla pod
Direction :
Preheat the oven to 180c
Place the fruit into an ovenproof dish and sprinkle over the sugar.
Mix the crumble mix together in a bowl using your fingertips. Mix until it resembles breadcrumbs, sprinkle over the dish and then bake for 45 minutes.
To make the custard, put the milk and cream in a pan with vanilla and its seeds. Warm gently through.
Whisk the egg yolks with the sugar.
Pour the milk mixture over the yolk mix, and whisk together.
Transfer this to the pan, continuously whisking until it thickens and sieve off into a bowl.
